 RECETAS NAVIDEÑAS

ROASTED LAMB

INGREDIENTES PARA 6 PERSONAS

3 small lamb shoulders or 2 legs (approximately 1 kg, or 2 lbs.)
Various seasoning herbs
2 bay leaves
Vinegar
4 garlic cloves
Olive oil
12 small cooked potatoes
Parsley and salt


Preparation
Fill bottom of a large clay baking dish with olive oil and a splash of vinegar. Make sure there is plenty of room for all the ingredients. Add seasoning herbs and bay leaves. Make large deep cuts into shoulders or legs of lamb (the butcher at the grocery store can do it for you if you ask). Insert peeled garlic cloves into sliced sections. Rub shoulder or leg of lamb with salt, crushed garlic and olive oil. Splash with a bit of vinegar and place into baking dish. Put baking dish in pre-heated oven and roast at 300ºF for 1 to 2 hours (depending on the size of legs or desired roasting). If meat becomes dry while roasting, add water and a bit of vinegar. Once done, remove meat from oven and cut into slices. Serve in juices.
