RED CABBAGE AU GRATIN

Ingredients: (6 Servings)

1 Medium red cabbage
2 pippin apples
Grated cheese
Light white sauce
Oil, vinegar and salt


Preparation

Wash and cut cabbage, and remove center core. Peel and cut apples into small, uniform pieces. Pour enough oil to cover the bottom of a pressure cooker. Add cabbage and apples. Season with salt and three tablespoons of vinegar. Sauté for a couple of minutes, add water, then cover. Cook until cabbage is tender. Drain cabbage thoroughly after cooking and place in a saucepan on the stove. Pour in the light white sauce. Sprinkle with grated cheese. Place in the oven before serving to obtain that au gratin look.
