RED
CABBAGE AU GRATIN
Ingredients: (6 Servings)

Medium red cabbage |
 |
2
pippin apples |
 |
Grated
cheese |
 |
Light
white sauce |
 |
Oil,
vinegar and salt |
Preparation

Wash and cut cabbage, and remove
center core. Peel and cut apples into small, uniform pieces. Pour
enough oil to cover the bottom of a pressure cooker. Add cabbage and
apples. Season with salt and three tablespoons of vinegar. Sauté for
a couple of minutes, add water, then cover. Cook until cabbage is
tender. Drain cabbage thoroughly after cooking and place in a saucepan
on the stove. Pour in the light white sauce. Sprinkle with grated
cheese. Place in the oven before serving to obtain that au gratin
look.
