Caramel
glaze: 100 g (3.5 oz.) sugar and 3 tbspns water

Preparation Pour just enough oil to cover the
bottom of a casserole and heat over low flame. When hot, add unpeeled
garlic cloves, peeled onion, and whole apple. Sauté for a about three
minutes and remove from heat. Add salt to the meat and place in casserole.
Turn pork until brown on all sides, then remove from heat. After oil
has cooled, pour in wine and broth. Cover casserole and stew the pork,
on low heat, 15 minutes on one side and 15 minutes on the other. Remove
and allow to cool. In a saucepan, heat sugar and 3 tbspns of water.
When caramel glaze is ready, remove from heat and apply all around
pork loin. Place directly on serving plate. Pour any excess caramel
mixture over the meat. This course can be served with egg yolk garnish
or with its own gravy.
