ROASTED
TURKEY WITH APPLES

legs and wings |

1 leek, 2 potatoes, 3 carrots |

Olive oil, salt and oregano |
To
prepare the turkey:

SRemove
turkey's wings and set aside for broth. Season turkey and brush
with olive oil both inside turkey as well as on skin. Inside turkey,
add a bit of oregano, 3 pieces of bacon (preferably with a little
meat), 1 whole onion and 1 whole apple. If turkey legs are completely
separated, tie together with cooking string. Wrap bacon strips over
the turkey breast and turkey legs, connecting them with rounded
toothpicks. Pour olive oil in large baking dish. Make sure dish
is large enough to allow space between all the ingredients. Place
turkey in center of dish and the garlic cloves, onions and apples
around turkey. Roast for 2 to 3 hours (depending on size of turkey)
at 350ºF. Continually sprinkle broth over turkey while it is roasting.
Pierce turkey breast with fork to see if it's done. If juice is
pink, continue roasting for another 15 minutes and check using the
same method. Once roasted, set turkey aside for about 30 minutes.
Remove cooking string and carve. Serve turkey in juices and apples.
If the apples come apart in the oven, make a purée mixing together
with a little turkey broth.
To
prepare turkey broth:
EPut all of broth's ingredients into pot filled with water. Once
water boils, add desired amount of salt and wine. Cover pot and
slowly cook over low heat for approximately 90 minutes. If some
of broth's liquid evaporates, add more water.
